The culinary heritage of Hue, Vietnam, is a significant component of the city's cultural identity, with its royal cuisine and distinctive local dishes playing a crucial role in attracting tourists. As globalization and urbanization continue to shape the landscape of the modern world, preserving and promoting Hue's culinary traditions becomes increasingly important for maintaining its unique appeal and fostering sustainable tourism development. This study aimed to assess the significance of preserving and promoting Hue's culinary heritage amidst the challenges posed by globalization and urbanization and explore potential strategies for enhancing the city's tourism appeal through its rich food culture. Through a combination of qualitative and quantitative research methods, including interviews, surveys, and observational studies, this research investigated the current state of Hue's culinary heritage, its role in the city's tourism industry, and the potential threats and opportunities presented by globalization and urbanization. Additionally, the study analyzed the collaborative efforts of local authorities, restaurants, and tourism businesses in promoting Hue's culinary traditions and developing sustainable tourism products centered around its food culture. The findings of this research provide valuable insights for policymakers, tourism stakeholders, and local communities in Hue to better understand the importance of their culinary heritage, formulate effective strategies for its preservation and promotion, and capitalize on its potential to enhance the city's tourism competitiveness. Furthermore, this study contributes to the broader academic discourse on culinary tourism and heritage preservation in the context of globalization and urbanization, offering insights and best practices that can be applied to other cultural destinations facing similar challenges.
