In this study, spatially resolved spectroscopic measurements have been combined with light propagation models to separate the scattering and absorption properties, which are then respectively related to the microstructure and chemical composition. This approach has been validated on optical phantoms and applied to Braeburn apples subjected to shelf-life storage.
