The influences of alginate concentration, types of co-polymer and their concentrations on the mean diameter, yield, microencapsulation efficiency, leakage and storage stabilities of encapsulated protease and lipolase beads were studied. A solution of protease from Aspergillus oryzae and lipolase from Thermomyces lanuginosus were encapsulated in calcium alginate/chitosan beads (CACB), calcium alginate/xanthan gum beads (CAXB), and calcium alginate/maltodextrin beads (CAMB) using the inotropic gelation and extrusion methods. The mean diameter, yield and microencapsulation efficiency of protease and lipolase encapsulated were increased and leakage was decreased while storage stability was no significant difference when alginate concentration increases from 1.5 to 2.0% and polymer concentration increases from 0.2 to 0.4%. In addition, protease encapsulated in CACB with 2.0% alginate and 0.2% chitosan provided the highest yield and microencapsulation efficiency, which were 81.66% and 77.20%, respectively; the mean diameter of protease-CACB was 1.85 mm with the leakage was as low as 8.13%; and the protease-CACB activity remained 75.6% after storage at 4oC for 10 weeks. Lipolase encapsulated in CAXB with 2.0% alginate and 0.4% xanthan gum provided the highest yield and microencapsulation efficiency, which were 42.45% and 43.86%, respectively; and the mean diameter of lipolase-CAXB was 1.81 mm with the leakage was as low as 6.24%. Furthermore, the lipolase-CAXB activity was 77.94% after storage at 4oC for 10 weeks.
