Pouzolzia zeylanica is one of the various kinds of medicinal plant. It owns many bioactive compounds and it serve as antioxidant, antimicrobial and anticarsinogenic properties. The aim of this study was to optimize the operation conditions of aqueous extract concentration from dried Pouzolzia zeylanica. Carboxymethyl cellulose was used as thickening agent, whereas sugar and citric acid were used to improve the flavor of the final product. The Response Surface Methodology (RSM) with 3-level factorial design was applied for process optimization to investigate the influence of the vacuum levels (550 to 650 mmHg) and concentration time (30 to 40 minutes) on bioactive compounds content and sensory characteristics of product. The obtained optimum parameters (the vacuum level of 618.469 mmHg and concentration time of 32.713 minutes) for the highest bioactive compounds content and the lightness (L* value); the least non-enzymatic browning (NEB) and the total color difference (DE) in the product were found. At these optimal conditions, the content of anthocyanin, flavonoid, polyphenol and tannin were 3.243 mg Cyanidin-3-glycoside equivalent (CE)/100g dry matter (DM), 4.098 mg quercetin equivalent (QE)/g DM, 8.445 mg gallic acid equivalent (GAE)/g DM and 6.233 mg tannic acid equivalent (TAE)/g DM, and L* values, total color difference and nonenzymatic browning were 35.598, 1.649 and 0.390, respectively. The total soluble solids of product were 44.88oBrix. The obtained experimental results were adequately fit to empirical quadratic models and agreed with predicted data within a 95% confidence interval. The process was successful in pilot scale and the product could be used as one of the beverage for health strengthening.
